Gluten Free Feta and Courgette Fritters
These delicious and golden gluten free courgette and feta fritters are easy to make and hold together - what an absolute treat. Serve with a poachy, some yoghurt and sweet chili sauce.

SERVES 4
600g coarsely grated courgettes (around 3-4)
100g plain gluten free flour (my favourite is Dove’s Farm)
2 beaten eggs
150g feta crumbled
1 garlic clove, finely chopped
Juice of half a lime
2 tbsp fresh coriander, or any herb you fancy - mint works well, as do dried herbs
½ tsp dried chilli flakes
Method
Grab your grated courgette, put in a bowl and sprinkle with salt. Leave for 10 minutes
Drain excess water, and then place the courgettes on a clean tea towel and squeeze out as much liquid as you can. If you do not have a spare tea towel stick it on some kitchen towel and try to get as much liquid as you can out
Put the courgette back in the bowl, sift in the flour and eggs and mix well
Now add the feta, garlic, lime juice, herbs, chili and plenty of seasoning and mix once more
Heat oil in a frying pan over a medium heat
Use two tablespoons of batter per fritter and shape into chunky discs before placing into the oil. You can flatten them more with a spatula if needed. My tip is use plenty of oil so the fritters don’t stick to the pan
Fry until golden on both sides and then drain them on kitchen paper
Serve with a poached egg, yoghurt and sweet chili sauce
